BEEF TENDERLOIN WITH MUSHROOMS & WALNUTS

2 TABLESPOONS UNSALTED BUTTER
2 LBS. WHITE MUSHROOMS, SLICED ¼ INCH THICK
1 MEDIUM GARLIC CLOVE, MINCED
1 TEASPOON FRESH THYME, OR ½ TSP. DRIED
SALT AND FRESHLY GROUND PEPPER
2 LBS. BEEF TENDERLOIN, TIED
½ CUP COARSELY CHOPPED WALNUTS
2 TBSP. FINELY CHOPPED FRESH FLAT LEAF PARSLEY

PREHEAT OVEN TO 450.  IN A HEAVY MEDIUM ROASTING PAN PLACED OVER TWO BURNERS, MELT THE
BUTTER OVER MODERATE HEAT.  ADD THE MUSHROOMS, GARLIC, THYME, ¼ TSP. OF SALT AND 1/8 TSP. OF
PEPPER, AND COOK, STIRRING OCCASIONALLY, UNTIL THE MUSHROOMS BEGIN TO SOFTEN AND RELEASE
THEIR LIQUID, ABOUT 5 MINUTES.

SEASON THE BEEF WITH SALT AND PEPPER AND SET IT ON TOP OF THE MUSHROOMS.  ROAST IN THE OVEN
UNTIL AN INSTANT READ THERMOMETER INSERTED IN THE CENTER READS 120 DEGREES FOR RARE.  
TRANSFER THE BEEF TO A CARVING BOARD, COVER LOOSELY WITH FOIL AND LET REST FOR 15 MINUTES.  

IN A SMALL SKILLET, TOAST THE WALNUTS UNTIL GOLDEN.

STIR THE WALNUTS AND PARSLEY INTO THE MUSHROOMS. SEASON WITH SALT AND PEPPER.  

SLICE THE BEEF AND SERVE WITH THE MUSHROOM MIXTURE.

ITALIAN BEEF

5      LB.           EYE ROAST (CUT RAW AS THIN AS CHIP STEAK)
           LAWRY'S GARLIC SALT
           PEPPER
           OREGANO
           PARSLEY
           PARMESAN CHEESE



OIL PAN LIGHTLY.  LAY EYE ROAST SLICES ON BOTTOM, ADD GARLIC SALT, PEPPER, OREGANO, PARSLEY
AND PARMESAN CHEESE.  DRIZZLE WITH OIL AND REPEAT LAYERS.  

COVER WITH FOIL AND BAKE AT 350 FOR 45 MINUTES.

USE A NICE HARD ITALIAN  ROLL.  IF YOU USE A SOFT ROLL THE MEAT MIGHT FEEL TOUGH.

2                    EGGS (SCRAMBLED IN A BOWL WITH MILK)
1      TBS.          PARSLEY
1      TSP.          LAWRY'S GARLIC SALT
1/4  TSP.          PEPPER
2        TBS.                LUCATELLI CHEESE

MIX ALL.  FRY IN LIGHT OIL OR BAKE @ 425 ABOUT 20 MINUTES THEN TURN OVER FOR ABOUT 5 – 10 MORE
MINUTES.  THEY WILL BROWN IN THE OVEN.

PRIME RIB

20      LB.           PRIME RIB - SMALL SLIT AT BONE SECTION

RUB WITH KOSHER SALT AND CANADIAN BLACK PEPPER.  MELT BUTTER AND PRESS GARLIC.

RUB MEAT AND PRESS GARLIC IN SLITS NEAR BONE. PLACE ONIONS AND SHALLOTS IN THE BOTTOM OF
THE PAN.  ROAST BEEF ON RACK IN PAN.

COOK AT 450 - 30 MINUTES AND THEN 350 - 2 1/2 TO 3 HOURS.

CHECK TEMPERATURE TO 110-115.  LET STAND 1/2 HOUR AND TEMP WILL RISE TO 130.

AFTER COOKED - MIX 2 CUPS RED WINE AND 4 CUPS BEEF BROTH TO DRIPPINGS AND MAKE GRAVEY
ADD 2 TBS - 1/4 CUP
DARK BROWN SUGAR AND 1 TBS. FRESH THYME OR 1/2 TSP DRIED.

MRS. LEMMO’S POT ROAST

3 LB. BOTTOM ROUND ROAST
1 SM. CAN TOMATO SAUCE
¼ CUP RED WINE VINEGAR
1 TSP. SUGAR
1 TSP. SALT
¼ TSP. BLACK PEPPER
1 TSP. WORCESTERSHIRE SAUCE
5-6 CARROTS

IN LARGE POT ADD 2 TBS. OIL AND BROWN ROAST.  ADD SALT & PEPPER.
ADD REMAINING INGREDIENTS TOGETHER AND ADD INTO PAN WITH THE BEEF.   SIMMER FOR
2 -3 HOURS.

REMOVE BEEF.

IF SAUCE IS TOO THIN,  MIX 1 TBS. CORNSTARCH AND ¼ CUP WATER AND
ADD TO SAUCE UNTIL THICKEN.
