PINEAPPLE

BUY A NICE FIRM PINEAPPLE.

HOLD UPRIGHT AND WITH A BIG SERRATED KNIFE CUT RIGHT THROUGH THE CENTER OF THE PINEAPPLE.  
(TRYING TO KEEP AT LEAST ONE SIDE OF THE PINEAPPLE TOP IN ONE PIECE.)

CUT DOWN THE SIDES OF THE PINEAPPLE TRYING TO REMOVE ALL THE PINEAPPLE FROM THE INSIDE
LEAVING
THE OUTER SKIN IN ONE PIECE WITH THE TOP STILL CONNECTED.  CUT THE PINEAPPLE SO THAT THE CORE
IS
REMOVED.  I USUALLY CUT THREE SECTIONS REMOVING THE CORE.  

CUT INTO 1" PIECES AND PUT BACK INTO THE PINEAPPLE WITH TOOTHPICS.

COCONUT POUND CAKE


1      CUP           CRISCO
2      CUPS         FLOUR
3 1/2  OZ            COCONUT
1 1/2  TSP          BAKING POWDER
2      CUPS         SUGAR
1      TSP             SALT
1      TSP.            COCONUT EXTRACT
5                           EGGS
1/2  CUP           MILK


CREAM SUGAR AND CRISCO.  ADD EGGS, ONE AT A TIME.
ADD DRY INGREDIENTS ALTERNATIVELY WITH MILK.
THEN ADD COCONUT AND COCONUT EXTRACT.

BAKE APPROXIMATELY 1 HOUR AT 350 IN GREASED TUBE PAN.

GLAZE:

1 CUP SUGAR    1 TSP. VANILLA     1/2 CUP WATER

BOIL 1 MINUTE AND POUR OVER CAKE WHILE STILL WARM.

(TRY 10X SUGAR - THIS WAS TOO THIN). (I PREFER IT WITHOUT THE GLAZE.)
(YOU COULD ALSO PUT ON DARK CHOCOLATE ICING IN LIEU OFGLAZE.)
                 MAMA LEMMO'S MEATBALL COOKIES


7                              EGGS
1 1/4  CUPS          SUGAR
1 1/4  CUPS          CRISCO (MELT & COOL)
1      TSP.               VANILLA
1/2  TSP.              LEMON
1/4  TSP.              ANISE OIL OR 1 TSP. ANISE FLAVORING
                              LESS THAN 1 TSP. BUTTER FLAVORING
1/4  TSP.              BAKING SODA
1      TBS.               BAKING POWDER
5      CUPS            FLOUR (5 - 6 CUPS)

GREASE COOKIES SHEETS.
MIX ALL EXCEPT FLOUR.
FOLD FLOUR.
REFRIGERATE 1 HOUR UNTIL NOT TOO STICKY.
ROLL INTO SMALL BALLS.
BAKE 375  - ABOUT 12 MINUTES.
BOTTOMS SHOULD BE A LITTLE GOLDEN.


GLAZE

1 CUP 10X SUGAR
2 TBS. MILK
1/4 TSP. ALMOND
SHARON'S KAMISH BREAD

3          EGGS
1 CUP SUGAR
1 CUP OIL
1 TSP. VANILLA

3 CUPS FLOUR
1 TSP.   BAKING POWDER
½ CUP  MINI CHOCOLATE CHIPS
CHOPPED NUTS (OPTIONAL)

1 TBS.  CINNAMON
1 TBS.  SUGAR

MIX EGGS, SUGAR, OIL AND VANILLA.
ADD IN FLOUR AND BAKING POWDER.
MIX WELL AND THEN ADD CHOCOLATE CHIPS

OIL 2 COOKIE SHEETS
MAKE 4 LONG LOGS

SPRINKLE WITH CINNAMON AND SUGAR MIXTURE.

BAKE 350 FOR 30 MINUTES AND THEN CUT INTO SLICES AND
LEAVE IN OVER TURNED OFF FOR AN ADDITIONAL 10 MINUTES.
MARY RUETER'S  POUND CAKE

1 1/2      CUPS                 VANILLA WAFERS CRUNCH UP
1             CUP                   WALNUTS - CHOPPED
1/2          CUP                   BUTTER
1/3          CUP                   SUGAR
                                    
1/2           CUP                   MILK
1              CUP                   BUTTER
4                                          EGGS
2               CUPS                SUGAR
2               TSP.                  VANILLA
2 2/3        CUPS                FLOUR
3               TSP.                  BAKING POWDER


PREHEAT OVEN TO 350.

BLEND VANILLA WAFERS AND WALNUTS IN BLENDER LIKE BREAD CRUMBS.
MIX 1/2 CUP BUTTER AND 1/3 CUPS SUGAR INTO CRUMBS WITH HANDS.               
LINE THE BOTTOM AND SIDES OF A GREASED ANGEL FOOD PAN.

MIX REMAINING BUTTER, SUGAR, EGGS, MILK AND VANILLA.  
ADD FLOUR AND BAKING POWDER.

BAKE 350 - 1 - 1 1/2 HOURS.
