FRENCH ONION SOUP

 2      CUPS          ONIONS - SLICED
1      TBS.            BUTTER
1/4   TSP.             SUGAR
1      TBS.            CORN STARCH
1      TSP.            SHERRY OR WHITE WINE
2      13 3/4 CANS   BEEF BROTH

SAUTEE ONIONS IN BUTTER FOR 30 MINUTES COVERED. ( UNTIL ONIONS ARE BROWNED AND  
CLEAR. )(THE BROWNER THE BETTER FOR THE BROTH.)

ADD SUGAR, CORN STARCH AND SHERRY.

ADD BEEF BROTH AND SIMMER 30 MINUTES.

BUTTER BOTTOM OF CROCKS.  ADD 1 CUP SOUP.  ADD TOASTED BREAD TO COVER TOP OF
SOUP.  ADD CHEESE - LAY 2 SLICES THEN ABOUT 1 CUP GRATED SWISS, MOZZARELLA AND
PARMESAN MIXED.

BAKE @ 425 - 20 MINUTES.
OYSTER STEW

  4      TBS.          BUTTER
1      PINT          SHUCKED OYSTERS IN THEIR OWN LIQUID
1      CUP           LIGHT CREAM
1      CUP           MILK
                           SALT, PEPPER AND PAPRIKA
  1/2  TSP.          WORCESTERSHIRE SAUCE

MELT BUTTER IN SAUCEPAN.

STIR IN OYSTERS AND LIQUID AND COOK UNTIL EDGES OF OYSTERS CURL ABOUT 3
MINUTES.

ADD CREAM AND MILK THEN ADD SALT, PEPPER AND WORCESTERSHIRE SAUCE.

HEAT JUST TO BOILING POINT.  DON'T BOIL.

SERVE WITH A DASH OF WHITE PEPPER, PAPRIKA AND PARSLEY IN THE CENTER.

SERVES 4.

POTATO SOUP

8      SLICES        BACON - MICROWAVED (CRUMBLED WHEN COOLED)
1      CUP             DICED ONION
  2/3  CUP            FLOUR
7      CUPS          CHICKEN BROTH
4      CUPS          DICED PEELED POTATOES
2      CUPS          HALF AND HALF
  1/4  CUP           CHOPPED FRESH PASLEY OR 1 TSP. DRIED
  1/2  TSP.           TABASCO SAUCE
1      CUP            GRATED CHEESE - MONTEREY JACK & CHEDDAR
  1/4  CUP           DICED GREEN ONION (SCALLION)

COOK ONIONS IN 1 - 2 TBS. OIL IN PAN UNTIL TRANSPARENT AND A LITTLE BROWNED.
STIR IN FLOUR - 3 MINUTES.
ADD BROTH GRADUALLY (STIR CONTANTLY SO FLOUR DOESN'T CLUMP TOGETHER).
REDUCE HEAT TO SIMMER.
ADD POTATOES AND SIMMER 10 - 15 MINUTES.
ADD CREAM, PARSLEY, TABASCO AND PEPPER.
SIMMER 10 MINUTES. DO NOT BOIL.

SERVE SOUP IN BOWL WITH A LITTLE CHEESE ON TOP WITH BACON AND SCALLIONS.
SPLIT PEA SOUP

1      BAG           SPLIT PEAS
1                         HAM BONE
1      SLICE        ONION
3                         CARROTS
3      STALKS    CELERY
1      TSP.           SALT (DEPENDING ON SALTINESS OF HAM
                           PEPPER
1      TSP            OREGANO
8      CUPS         WATER

RINSE PEAS.
ADD ALL TO POT AND SIMMER FOR 2 HOURS.

ZUPPA TUSCANY

1 1/2  CUPS           HOT SAUSAGE
4       MEDIUM        POTATOES
 3/4   CUP              DICED ONIONS
6       SLICES         BACON
1                              MINCED GARLIC CLOVE
2       CUPS           KALE LEAVES CHOPPED
2       TBS.             CHICKEN BASE
8       CUPS           WATER
1/4      CUP              HEAVY CREAM OR 1 CUP HALF AND HALF

REMOVE SAUSAGE FROM CASING AND SAUTEE - SET ASIDE.

PLACE ONIONS IN LARGE SAUCEPAN AND COOK OVER MEDIUM HEAT UNTIL ONIONS ARE
ALMOST BROWNED.

ADD GARLIC AND COOK ONE MORE MINUTE.

ADD WATER, CHICKEN BASE AND POTATOES - SIMMER 15 MINUTES.

MICROWAVE BACON, LET COOL AND CHOP INTO TINY PIECES.

ADD BACON, SAUSAGE, KALE AND CREAM AND SIMMER FOR 5 MINUTES.

SCRAPELLE'S

 2      CUPS          WATER
 1      CUP            FLOUR
 3                          EGGS
1/4  TSP.              SALT

MIX ALL TILL A NICE THIN BATTER.

GREASE PAN WITH CRISCO.

FRY 90 SECONDS ON 1ST SIDE
AND 30 SECONDS ON 2ND SIDE.

AFTER FRIED AND COOLED.  PUT ABOUT 1 TBS. OF GRATED LUCATELLI CHEESE IN EACH
AND ROLL.
SERVE IN CHICKEN BROTH ABOUT 2 - 4 PER BOWL.
